Obiettivi formativi

Lo studente di Produzioni Animali Sostenibili acquisirà una buona conoscenza e comprensione degli strumenti concettuali, tecnici, normativi, etici, ambientali ed economici implicati nelle produzioni zootecniche e capacità di mantenere continuamente aggiornate e collegate tali conoscenze e capacità agli aspetti più innovativi ed avanzati nei contesti di esercizio della propria professione.

Inoltre, imparerà a traslare le informazioni teoriche e le abilità operative acquisite, ai contesti scientifici e tecnologici previsti nelle operatività proprie delle varie applicazioni delle nella filiera agroalimentare, attraverso, non solo l'analisi e descrizione delle operazioni e i processi, ma anche l'utilizzo degli stessi, e l'intervenire su di essi con gli opportuni mezzi e strumenti scientifici e tecnologici al fine di ottenere beni e servizi utili. In definitiva, imparerà: a) saper partecipare attivamente e creativamente alla risoluzione di problematiche nel proprio contesto lavorativo; b) saper intervenire nelle procedure di controllo e gestione delle procedure operative; c) saper pianificare e condurre autonomamente il proprio lavoro tecnico e/o di ricerca.

The student of Sustainability Animal Production will have to acquire adequate basic knowledge: biology, anatomy and physiology of livestock animals, livestock breeding and food production, animal breeding systems and environmental interactions, knowing how to use them in their application aspects along the entire food chain; to know the methods of investigation proper to the science and technology of livestock and to be able to use the results of research and experimentation for professional purposes and to finalize their knowledge as a means of protection and/or degradation of the territory beyond the solution of the sustainability, quality and safety of livestock production.

AUTONOMIA DI GIUDIZIO (MAKING JUDGEMENTS)

Lo studente di Produzioni Animali Sostenibili dovrà essere in grado di raccogliere ed interpretare i dati derivanti dalla propria attività in modo autonomo, critico ed autorevole, individuandone i presupposti, analizzandone le dinamiche di trasformazione e descrivendone le conseguenze. Dovrà, inoltre, essere in grado di collegare tutti gli aspetti della propria operatività valutandone le conseguenze ambientali, scientifiche, etiche ed economiche. Dovrà, pertanto possedere consapevolezza ed autonomia di giudizio tali da acquisire le informazioni necessarie e valutarne le implicazioni in un contesto produttivo e di mercato, per attuare interventi atti a migliorare la qualità e l'efficienza della produzione alimentare e di ogni altra attività connessa, anche in termini di sostenibilità ambientale ed ecocompatibilità.

CAPACITÀ DI APPLICARE CONOSCENZE E COMPRENSIONE (APPLYING KNOWLEDGE AND UNDERSTANDING)

Lo studente di Produzioni Animali Sostenibili dovrà essere in grado di acquisire le informazioni necessarie e valutarne le implicazioni in un contesto produttivo e di mercato, al fine di migliorare l'efficienza della produzione zootecnica e di tutte le attività ad essa correlate, in particolare in termini di sostenibilità ambientale ed eco-compatibilità.

ABILITÀ COMUNICATIVE (COMMUNICATION SKILLS)

Lo studente di Produzioni Animali Sostenibili dovrà sapersi esprimere correttamente e con rigore scientifico, anche in inglese, sia per la stesura di rapporti tecnico-scientifici in ambito aziendale che, più in generale, per comunicare in ambito accademico-scientifico e sociale i risultati del proprio lavoro tecnico e/o di ricerca, sia ad un pubblico esperto che, in termini adeguatamente comprensibili ma altrettanto rigorosi, ad un pubblico non specializzato. Dovrà inoltre aver acquisito buone capacità relazionali nella gestione della propria attività lavorativa, sapendo lavorare in gruppo con adeguate capacità di inserimento nell'ambiente di lavoro, anche in contesto internazionale.

CAPACITÀ DI APPRENDERE (LEARNING SKILLS)

Lo studente di Produzioni Animali Sostenibili dovrà acquisire non solo competenze e conoscenze adeguate al conseguimento del titolo di studio, ma soprattutto stimoli, capacità e metodi di apprendimento adeguati per lo sviluppo e l'aggiornamento continuo delle proprie competenze. Sarà quindi in possesso di motivazioni e metodi per progredire a livelli di conoscenza sempre più avanzati mediante una adeguata autonomia operativa, utilizzando gli strumenti offerti dalle tecnologie della comunicazione e dell'informatica.

The student of Sustainability of Animal Production will:

- acquire a good knowledge and understanding of the conceptual, technical, regulatory, ethical, environmental and economic tools involved in livestock productions and develop the ability to keep up to date and connect these knowledge and skills to the most innovative and advanced aspects in the contexts of their profession,

- have the skills and competences of problem solving, i.e. translate the theoretical knowledge and the acquired operating skills into the scientific and technological contexts envisaged in the operations of the various applications of the agro-food chain. It should also be able, not only to analyze and describe operations and processes, but also to use them and to intervene on them with the appropriate scientific and technological means and tools in order to obtain useful goods and services. It will ultimately have: a) know how to actively and creatively participate in problem solving in your work environment; b) know how to intervene in the procedures for controlling and managing operational procedures; c) know how to plan and conduct their own technical and / or research work independently.

 

MAKING JUDGMENTS

The Sustainable Animal Production must be able to collect and interpret the data derived from his / her own business in an autonomous, critical and authoritative way, identifying the assumptions, analyzing the transformation dynamics and describing the consequences. It will also have to be able to link all aspects of its operations by assessing the environmental, scientific, ethical and economic consequences. Therefore, must have awareness and autonomy of judgment to acquire the necessary information and assess its implications in a productive and market context in order to implement measures to improve the quality and efficiency of food production and any other related activity, including In terms of environmental sustainability and compatibility.

ABILITY TO APPLY KNOWLEDGE AND UNDERSTANDING (APPLYING KNOWLEDGE AND UNDERSTANDING)

The student of Sustainability Animal Production will need to be able to acquire the necessary information and to evaluate its implications in a productive and market context in order to implement actions to improve the efficiency of livestock production and all other related activities, including in terms of Environmental sustainability and eco-compatibility.

COMMUNICATION SKILLS (COMMUNICATION SKILLS)

The student of Sustainability Animal Production must be able to express correctly and with scientific rigor, even in English, both in the drafting of technical-scientific relations in the business field. Generally, in communicating academic-scientific and social results of his/her own Technical and/or research work, both to an expert audience who, in terms that are sufficiently understandable, but equally rigorous to an unskilled public. It will also have to acquire good relational skills in managing its own work, knowing how to work in a group with adequate skills to work in the workplace, even in an international context.

LEARNING SKILLS (LEARNING SKILLS)

The Sustainable Livestock Producer Student will have to acquire not only the skills and knowledge appropriate to the qualification, but above all the appropriate stimuli, skills and learning methods for the continuous development and updating of their skills. It will therefore be in possession of motivations and methods to progress to increasingly advanced knowledge levels through adequate operational autonomy, using the tools offered by the technologies of communication and information technology.

L'acquisizione di tali conoscenze sarà supportata da lezioni teoriche in aula e da lezioni teorico-pratiche in allevamento, per un totale di 60 ore (40+20). Oltre che supportata formato pdf delle lezioni.

A causa dell'emergenza CoVid-19, saranno attuate le seguenti modalità di insegnamento:

  • materiale delle lezioni (pdf) caricati su piattaforma moodle
  • approfindimenti con articoli mirati
  • video e link a siti
  • lezioni online (Webex)

Learning such knowledge will be supported by theoretical classroom lessons and theoretical-practical lessons in farm, for a total of 60 h (40+20). In addition to supported pdf format of lessons.

Modalità di verifica dell'apprendimento

Gli studenti verranno valutati sia in itinere orale (presentazione PPT, su articoli forniti dalla prof.ssa Mugnai) che una prova finale di apprendimento scritto (quiz ultima lezione prof.ssa Mugnai e relazione da inviare via mail alla prof.ssa Gasco 14 gg prima dell'esame), entrambe in lingua inglese. 

 

Students will be evaluated both in English language in oral examination (PPT presentation, on scientiphic article furnished by prof Mugnai) and in written (final) learning tests (quiz during last lesson for prof Mugnai and sending relation to prof Gasco 15 days before exam).

I sistemi di produzione zootecnica: classificazione F.A.O., impiego delle risorse naturali nel settore zootecnico. Attività agropastorale e degrado territoriale. La gestione del pascolo. L'allevamento animale e l'inquinamento ambientale, fattori delle produzioni zootecniche che influenzano la sostenibilità ambientale (alimentazione, allevamento intensivo/ free range/biologico, uso e gestione del suolo e delle acque) della produzione e impatto ambientale delle diverse produzioni zootecniche (inquinamento da azoto e fosforo provenienti dai reflui nei poligastrici e nei monogastrici. Emissioni gassose e d'inquinamento dell'aria). Cenni sul sistema LCA per la stima dell'impatto ambientale degli allevamenti.

Tecnica di allevamento, miglioramento genetico ed effetti su ambiente, salute e fitness e benessere dell'animale. Relazioni tecniche e fisiologiche tra razza, alimentazione, pascolo e carotenoidi, tipo di fibra muscolare, metabolismo energetico e le caratteristiche qualitative (composizione chimica, qualità nutrizionale) dei prodotti di origine animale (carni avicunicole ed uova); buone pratiche in termini zootecnici, ambientali, di efficienza aziendale e di benessere degli animali; esempi applicativi di Zootecnia Sostenibile. Zootecnia biologica. Cenni sulle caratteristiche qualitative dei prodotti: confronto tra sistemi biologici e sistemi convenzionali.

Acquacoltura: problematiche di impatto ambientale, tecnologie di allevamento, riproduzione e benessere animale.

Insetti come food e feed. Generalità sull'uso degli insetti nell'alimentazione umana e animale. Tradizioni e nuove prospettive. Valore nutrizionale degli insetti. Rischi microbiologici, parassitologici, allergie, tossicità. Aspetti legislativi riguardanti l'allevamento, la sicurezza alimentare e la commercializzazione degli insetti. Principali specie utilizzate nell'alimentazione umana e animale e nell'industria alimentare. Tecniche di allevamento delle principali specie. Sicurezza degli allevamenti. Impatto dell'utilizzo dei prodotti a base di insetto nell'alimentazione animale

 

Classification for animal husbandry systems, concepts of land cover units, land use units and land use systems and impact of the livestock sector on environmental problems (land degradation), competitions and complementarities in the quest for feed biomass. Livestock's role in climate change and air pollution, greenhouse emissions related to livestock rearing and carbon footprint. Livestock's role in water depletion and pollution, water use, eutrophication and health hazard and water footprint. Ecological footprint and livestock's impact on biodiversity. Challenging the Aquaculture Industry on Sustainability and sustainable aquaculture systems. Insect supply chain: General information on the use of insects as food and feed. Traditions and new perspectives. Nutritional value of insects.
